The ingredients needed to prepare Instapot Pot Roast:

  1. Use 3 lb. of beef roast.
  2. Get 3 Tbsp. of oil.
  3. Get 1 cup of beef broth.
  4. Get 2 Tbsp. of tomato paste.
  5. You need 2 Tbsp. of Balsamic Vinegar.
  6. Get 1 Tbsp. of Worcestershire sauce.
  7. You need 6-8 of red potatoes, quartered.
  8. Provide 1 of small bag baby carrots.
  9. Prepare 1 of large white onion, halved and quartered.
  10. Prepare of Seasonings to taste: salt, pepper, garlic powder, parsley.

Steps to make Instapot Pot Roast:

  1. Season meat on both sides with seasonings of choice..
  2. Put oil in bottom of instapot and heat up on meat button/high heat..
  3. Once hot, sear the meat on both sides. You want to leave it on each side for about 3 minutes. Roast should come easily off bottom of pot..
  4. Once seared, pull out and set aside..
  5. To remaining oil add the beef broth, tomato paste, balsamic vinegar and Worcestershire sauce. Scrape bits off bottom of pot while mixing together..
  6. Place roast into sauce mixture. Seal instapot and cook on meat button with time adjusted to 55 minutes..
  7. Once finished release the steam, pull out roast and put aside..
  8. Leave juices in pot, do not drain!.
  9. Add potatoes, carrots and onion to pot..
  10. Place roast back on top. Mine was so tender it started to fall apart..
  11. Seal instapot and cook on vegetable button for 5 minutes. Release steam. Pull out meat and give veggies a good stir..
  12. Serve together or separate. I had mine with a little creamy horseradish. Enjoy!.

Set Instant Pot to saute, add ghee or avocado oil, and sear the meat until browned. Turn Instant Pot off, add the broth, collagen, tomato paste, Worcestershire sauce, and coconut aminos, stirring to combine. In a small bowl, combine seasoning salt, garlic, parsley, onion powder and pepper. When it reads "hot", add the oil and sear roast on all sides. First, you'll pat the meat dry with paper towels and season on both sides with salt and black pepper.
